3 Sheet Pan Meal Prep Recipes You Can Make Ahead

3 Sheet Pan Meal Prep Recipes You Can Make Ahead

Sheet pan meal prep starts with the recipe itself: each pan needs to be a complete meal, not a single roasted vegetable or a protein waiting for sides. The three recipes below each combine chicken, vegetables, and seasoning on one pan. Once you pick the one your family likes best, the same sheet pan meal prep routine works with any of them during a busy week. Start with the Cajun chicken and green beans, then try the crispy parmesan chicken or the garlic parm thighs when you want a different flavor profile.

Why These Sheet Pan Meals Work for Prepping Ahead

Each of the three recipes below is a complete chicken-and-vegetable dinner built on one pan, with its own seasoning and oven method. That makes them a natural fit for a Sunday or Monday sheet pan meal prep session: cook one or two pans, portion the chicken and vegetables into containers, and you have lunches or dinners ready for the week without juggling multiple pots.

1. Sheet Pan Chicken with Green Beans and Red Peppers

A straightforward Cajun-spiced chicken thigh dinner with green beans and red bell pepper, all roasted on one pan. The chicken goes in first, then the vegetables join for the final stretch so everything finishes together.

Method

  1. Preheat the oven to 400°F.
  2. Trim the ends off the green beans and slice the red bell pepper.
  3. Toss the chicken thighs with 1 tablespoon olive oil and 1 tablespoon Cajun seasoning. Place them on a sheet pan and bake for about 25 minutes.
  4. Toss the green beans and sliced red pepper with 1 tablespoon olive oil and 1/2 teaspoon salt.

2. Sheet Pan Crispy Parmesan Garlic Chicken

Crispy panko-and-parmesan chicken breasts with baby potatoes and asparagus, all baked together. The chicken is flipped and the asparagus is added partway through so everything finishes at the same time.

Ingredients

  • 4 chicken breasts, (about 2 pounds)
  • salt and pepper
  • 2 eggs
  • ¼ cup milk
  • 1 cup panko breadcrumbs
  • 1 cup parmesan cheese, (grated)
  • 1 tablespoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1 pound baby potatoes, (halved)
  • 1 bunch asparagus
  • salt and pepper
  • 2 tablespoons olive oil

Method

  1. Preheat the oven to 425°F. Spray a sheet pan with cooking spray or line it with parchment paper and set aside.
  2. In a shallow dish, whisk together the eggs and milk. In another shallow dish, combine the panko, grated parmesan, Italian seasoning, and garlic powder.
  3. Season the chicken breasts with salt and pepper. Dredge them in the egg mixture, then coat them in the panko mixture and lay them on the sheet pan.
  4. In two medium bowls, add the asparagus and halved baby potatoes. Season with salt and pepper and toss with the olive oil. Lay the potatoes next to the chicken on the sheet pan.
  5. Bake for 15 minutes, then flip the chicken over and add the asparagus. Bake for an additional 12–15 minutes, until the chicken reaches an internal temperature of 165°F.

3. Sheet Pan Garlic Parm Chicken

Bone-in chicken thighs and baby potatoes coated in a parmesan, lemon zest, and garlic seasoning mixture, roasted with asparagus added near the end. It is a savory, hands-off pan that portions well for meal prep.

Ingredients

  • 4 tablespoons vegetable oil, divided
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon lemon zest
  • 2 1/2 teaspoons McCormick® Garlic Powder
  • 1 1/2 teaspoons McCormick® Onion Powder
  • 1 teaspoon McCormick® Parsley Flakes
  • 1/2 teaspoon McCormick® Pure Ground Black Pepper
  • 1/4 teaspoon salt
  • 4 bone-in chicken thighs, trimmed of excess fat (about 1 1/2 pounds)
  • 1 1/2 pounds (24 ounces) baby potatoes, halved (about 4 cups)
  • 1/2 pound thin asparagus spears, trimmed

Method

  1. Preheat the oven to 425°F. Line a large sheet pan with foil and spray with no-stick cooking spray. Set aside.
  2. Mix 3 tablespoons of the oil, parmesan, lemon zest, garlic powder, onion powder, parsley flakes, and black pepper in a large bowl. Add the chicken and potatoes and toss to coat evenly with the seasoning mixture.
  3. Arrange the chicken skin-side up on one half of the sheet pan. Arrange the potatoes in a single layer on the other side of the pan.
  4. Roast for 20 minutes. Meanwhile, toss the asparagus with the remaining 1 tablespoon oil.
  5. Carefully remove the sheet pan from the oven. Push the potatoes to one side to make room for the asparagus, then arrange the asparagus on the pan. Rotate the pan before placing it back in the oven.
  6. Roast 15–20 minutes longer, until the chicken is cooked through and reaches an internal temperature of 165°F, and the potatoes and asparagus are tender.
