- 3 very ripe medium bananas, mashed (about 1 1/2 cups)
- 1/3 cup melted unsalted butter
- 2/3 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon fine salt
- 1 1/2 cups all-purpose flour
- Optional: 1/2 cup chopped walnuts or chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and line a 9×5-inch loaf pan.
- Mash the bananas in a mixing bowl until smooth.
- Stir in the melted butter until well combined.
- Add the granulated sugar, egg, and vanilla extract, mixing until fully incorporated.
- Sprinkle the baking soda and salt on top of the mixture, then fold in gently.
- Add the all-purpose flour and mix just until there are no dry streaks of flour.
- If using, fold in the chopped walnuts or chocolate chips.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake for 55-65 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
- Remove from the oven and let cool in the pan for 10 minutes before transferring it to a wire rack.
Notes
For muffin conversion, bake the batter in a muffin tin for about 18-20 minutes.
