- 4 chicken thighs, boneless and skinless
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 cup dried apricots, chopped
- 2 cups chicken broth
- 1 teaspoon ground cumin
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 1 teaspoon paprika
- 1/2 teaspoon turmeric
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 1 preserved lemon, chopped (optional)
- Fresh cilantro or parsley, for garnish
Instructions
- In your tagine or pot, heat olive oil over medium heat. Add onions and sauté until translucent, about 5 minutes.
- Add the garlic, followed by the chicken thighs. Brown the chicken for about 3-4 minutes on each side.
- Stir in the ground cumin, cinnamon, ginger, paprika, and turmeric, allowing the spices to coat the chicken.
- Add the dried apricots, chicken broth, and preserved lemon (if using). Bring to a gentle simmer.
- Cover and cook for 30-40 minutes on low heat until the chicken is tender and fully cooked.
- Remove the tagine from the heat and let it sit for a few minutes before serving.
Notes
This Moroccan chicken tagine is best served with couscous or crusty bread. Leftovers can be refrigerated and reheated easily.
