These Blueberry Lemon Pie Bars combine a buttery graham cracker crust with a tangy lemon filling and sweet blueberries, perfect for a summer dessert.

- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- ½ cup granulated sugar
- 2 large eggs
- 1 cup fresh blueberry puree
- ¼ cup lemon juice
- 1 tablespoon lemon zest
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- Powdered sugar, for dusting
Instructions
- In a mixing bowl, combine the graham cracker crumbs, melted butter, and sugar until well blended.
- Press the mixture firmly into the bottom of the prepared baking dish to form the crust.
- Bake the crust in the preheated oven for about 10 minutes, or until it is slightly golden. Remove and let it cool.
- In another bowl, whisk together the eggs, blueberry puree, lemon juice, lemon zest, flour, baking powder, and salt until smooth.
- Pour the blueberry filling over the cooled crust, spreading it evenly.
- Bake the bars for 20 minutes, or until the center is set and a toothpick comes out clean.
- Let them cool completely, then chill in the refrigerator for at least an hour before slicing.
- Dust with powdered sugar before serving, if desired.
Notes
Make sure to prepare the blueberries beforehand and allow adequate cooling time for the crust and bars.
