Description

Ingredients

  • 1 cup cottage cheese
  • 2 cups fresh spinach, chopped
  • 1 bell pepper, diced (any color)
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder (optional)
  • 1 teaspoon olive oil (for greasing)

Instructions

  1. In a large mixing bowl, whisk the eggs until they are well-beaten.
  2. Stir in the cottage cheese until fully combined.
  3. Add the chopped spinach, diced bell pepper, shredded cheese, salt, pepper, and garlic powder (if using), mixing until evenly distributed.
  4. Pour the egg mixture into the greased baking dish and spread it evenly.
  5. Bake in the preheated oven for 20-25 minutes, or until the center is set and the edges are golden brown.
  6. Remove from the oven and let it cool for about 5 minutes before slicing.
