These no-bake peanut butter oat snack cups are a delicious and easy treat that both kids and adults will enjoy.

- 1 cup rolled oats
- 1/2 cup peanut butter (natural, unsweetened)
- 1/4 cup honey or maple syrup
- 1/2 teaspoon vanilla extract
- 1/4 cup dark chocolate chips
- 1 teaspoon coconut oil (optional)
Instructions
- In a mixing bowl, combine the rolled oats, peanut butter, honey (or maple syrup), and vanilla extract. Mix until well-combined and a sticky dough forms.
- Divide the mixture evenly among your prepared silicone molds or mini muffin tin, pressing it down firmly to create a compact base.
- In a microwave-safe bowl, melt the dark chocolate chips and coconut oil (if using) together in short increments, stirring in between to prevent burning. Once melted and smooth, pour a thin layer over each oat cup.
- Place the filled molds in the refrigerator and chill for at least 20 minutes or until the chocolate sets.
Notes
These oat cups can be stored in an airtight container in the fridge for up to one week or frozen for longer storage. Enjoy them as a quick snack or a treat any time of day.
