Hearty Santa Fe Soup Recipe for Busy Weeknights

This Santa Fe soup recipe brings together ground beef, three kinds of beans, corn, and a double dose of seasoning for a rich, satisfying pot that simmers on the stovetop. With just five minutes of prep and about thirty-five minutes of cooking, it’s a practical dinner for home cooks who want deep flavor without a long ingredient list.

The recipe uses both taco seasoning and ranch seasoning, along with Rotel and a trio of drained beans. Everything comes together in one large pot or Dutch oven, so cleanup is minimal.

Brown the Ground Beef and Cook the Onion

Start by placing the ground beef in a large pot or Dutch oven. Set the heat to medium and brown the beef, breaking it apart as it cooks. Once it’s fully browned, drain off any excess grease.

Add the diced onion to the pot and cook for 3 to 4 minutes. The onion will soften and begin to blend with the beef.

Add the Garlic, Salt and Pepper

Stir in the minced garlic, salt, and ground black pepper. Cook for just 30 seconds to 1 minute. This short step wakes up the garlic without letting it burn.

Stir In the Taco and Ranch Seasoning, Broth, Rotel, Beans and Corn

Now add the taco seasoning, ranch seasoning, beef broth, Rotel, pinto beans, black beans, kidney beans, and corn. Stir everything together until the seasonings are evenly distributed.

Cover and Simmer on Medium-Low for 30 Minutes

Cover the pot and cook on medium-low for 30 minutes.
